This Smoked Salt Caprese Salad brings together juicy heirloom and ripe tomatoes, creamy mozzarella and fragrant basil, all elevated with a bold sprinkle of Hickory Smoked Salt. The smokiness enhances the natural sweetness of the tomatoes, creating a perfectly balanced bite.

INGREDIENTS
• 2 large heirloom tomatoes (mix of colours), sliced
• 2 large ripe tomatoes of your choice, sliced (Roma or truss tomatoes work great)
• 250 grams fresh mozzarella, sliced
• 1 handful fresh basil leaves
• 2 tbsp extra virgin olive oil
• 1 tbsp balsamic glaze
• Hickory Smoked Salt, to taste
• Freshly ground black pepper, to taste
Assembling the salad
Option 1:
Slice the heirloom and ripe tomatoes into rounds, showcasing their colours and textures.
Arrange the tomato slices and mozzarella on a serving plate, alternating them in a layered pattern.
Tuck fresh basil leaves in between the layers.
Drizzle with extra virgin olive oil and balsamic glaze.
Sprinkle generously with Hickory Smoked Salt and a touch of freshly ground black pepper.
Let the salad to sit for 10-15 minutes to allow the flavours to meld, then serve immediately.
Option 2:
For a more rustic presentation, slice the heirloom and ripe tomatoes in an uneven, natural way instead of uniform rounds. Tear the mozzarella by hand for added texture. Scatter fresh basil leaves over the top, drizzle with olive oil and balsamic glaze and finish with a generous sprinkle of Hickory Smoked Salt. Allow the salad to rest for 10-15 minutes so the flavours can blend, then serve right
Note: By allowing the salad to rest before serving enables the salt to draw out the tomato juices, creating a flavourful dressing that enhances the overall taste.
