Do your ingredients include Xanthan Gum?
We don’t use xanthan gum or other artificial thickeners, and here’s why:
• Texture matters. Xanthan gum can give sauces a slimy or gluey feel, instead of the smooth, natural texture we’re known for.
• It doesn’t behave like real food. Even a tiny bit can make a sauce unnaturally thick or elastic.
• We prefer a true, cooked-down body. Our sauces get their richness from real ingredients and time, not additives.
• Clean, honest flavour. Without gums, our sauces stay bright, bold, and full of character.
• Some people are sensitive to it. While xanthan gum is considered safe, it can cause digestive discomfort for those with sensitive stomachs — another reason we keep things simple.
• No gums means natural separation. Because we avoid artificial fillers, you may notice a little separation in the bottle — that’s completely normal. Just give it a good shake before opening, and you’re good to go.
• It’s just not needed. When your recipe is built right, nature provides all the thickness and mouthfeel you need.
What is Xanthan Gum?
Xanthan gum is a processed ingredient made by fermenting sugar with a bacteria called Xanthomonas campestris.
After fermentation, the mixture is precipitated (usually with alcohol), dried, and ground into a powder. It’s basically a fermentation-derived polysaccharide. Although not synthetic, it is still considered an additive.
While it’s safe to eat, it changes texture in ways that don’t fit our style, and it doesn’t align with our “nothing artificial, only the good stuff” philosophy.
